Amaranth: Everything loves to eat me!

Hello, I’m Amaranthus, but you might know me as amaranth. I’m a pretty special plant with a lot to offer! For starters, my seeds are packed with protein, fiber, and important minerals like iron and magnesium—a nutritious powerhouse! My leaves? Yep, those are edible too, full of vitamins and minerals. The bugs on the farm love munching me, and when I set seed the mice come to collect their harvest. In many places around the world, I’ve been enjoyed for thousands of years—ancient civilizations like the Aztecs and Incas even called me sacred.

But I’m not just useful in the kitchen. My vibrant flowers come in bold shades of red, purple, yellow, and green, which makes me a stunning addition to any garden. You might even know me as the lovely Love-Lies-Bleeding, with my long, drooping flowers that catch everyone’s eye!

I’m also a tough plant—I can grow in poor soil, handle droughts, and I’m super resilient. But don’t worry, I can be a bit of a show-off, too, as I grow tall and proud. Just be mindful, sometimes my wild relatives, like pigweed, can get a little too enthusiastic in the wrong places and become a bit of a nuisance.

Want to grow me? I love full sun and well-drained soil. Just water me when I’m thirsty, and I’ll reward you with my vibrant beauty or delicious harvest!

So whether you want me for food or just for the pretty flowers, I’m here to make your garden and meals that much more exciting.
